They are the perfect treat for dessert, brunch, lunch, and everything in between including the coffee or tea addition that you have been missing!

Whenever I think of dark chocolate and almonds, I’m reminded of the visits my daughter and I have shared to France. Over the course of several trips, one of our habits was to visit local boulangeries, or French bakeries, every morning in search of chocolate almond croissants. If we were not there early enough, they might have almond croissants, or chocolate croissants, but they would be sold out of the combination, which we absolutely loved!

This recipe is inspired by those visits. And visits that we both hope to have again.

What I love about Chocolate Almond Croissant Puffs

  • Premade puff pastry dough is the EASY, buttery, flaky basis.
  • Almond paste is a creamy, sweet almond essence in every bite.
  • Dark chocolate chips melt and combine with toasted almond slices.
  • This bakery quality dessert is made and out of the oven is less then 30 minutes!

How to make Chocolate Almond Croissant Puffs

Begin by thawing the puff pastry if using a frozen variety.

If your almond slices are not toasted, spread them on a baking sheet and cook them for 6-8 minutes until they are golden and fragrant.

Next, unroll the puff pastry sheet and smooth out the creases with a rolling pin.

Use a ruler and a pizza cutter to cut the sheet into 3″ squares.

Slice off about a teaspoon of almond paste and place it on each pastry square.

What is almond paste and where do I get it?

Almond Paste is made from ground almonds and sugar in equal quantities, with small amounts of cooking oil, beaten eggs, or heavy cream. It is similar to marzipan, but has a coarser texture. It is usually located in the baking aisle in most grocery stores or can be easily ordered online well. Solo is a well known brand that I’ve worked with before. There is a difference between Almond Cake and Pastry Filling and Pure Almond Paste, however.

After the almond paste, add chocolate chips, chunks, or pieces. I prefer a good quality dark chocolate.

Follow that with a few toasted almonds slices.

Next, make an egg wash. An egg wash is simply a beaten egg with a touch of water.

Dot a corner of the pastry with it, and pinch it together with the opposing corner. The egg wash acts as an adhesive with the puff pastry.

Lay the assembled croissants on a baking sheet and brush with more egg wash. Here, the egg wash will create a golden, glossy color, a crispy texture, and act as an adhesive for the garnish.

Garnish with additional toasted almond slices and a sprinkle of sugar.

Bake to golden, melty glory and enjoy!

Chocolate Almond Croissant Puffs

Ingredients

  • 13-17 ounces puff pastry dough chilled, but not frozen
  • 1 cup dark chocolate chips, morsels, or pieces
  • 4 ounces pure almond paste
  • 1/2 cup almonds, sliced and toasted
  • 1 egg
  • 1 tablespoon water
  • 2 tablespoons sugar, for garnish

Instructions

  • Preheat the oven to 400 degrees.
  • If the almond slices are not toasted, bake for 6-8 minutes on a large baking sheet until golden and fragrant.
  • Unroll the puff pastry dough on a lightly floured surface. If the pastry dough is the frozen variety, follow the package directions to thaw.
  • Use a ruler and a pizza slicer to cut 3" squares of puff pastry.

  • Place a teaspoon of almond paste, tablespoon of chocolate, and several almond slices in the center of each pastry square.
  • Beat the egg and water together in a small bowl until frothy.
  • Place a dot of egg wash on the corner of the pastry square to use a an adhesive when two of the four corners are pressed together.
  • Place the assembled pastries on a parchment lined baking sheet.
  • Brush the top of the pastries with the egg wash, dot with 3 to 5 almond slices, and sprinkle with a pinch of granulated sugar.
  • Bake for 13-17 minutes or until the croissants are golden and the chocolate is melted.
