Seriously Amazing Pork and Party Pico Nachos

You may be asking yourself, Seriously Amazing Pork and Party Pico Nachos?  Um, Yes!  If you take crispy, salty tortilla chips and top them mounds of shredded cheddar cheese followed with Insane Slow Cooker Pork Carnitas and top that with my Party Pico de Gallo, everyone will go home happy.

This recipe came about on a lazy Saturday afternoon when I was rummaging through the refrigerator trying to decide what to make for lunch.  We had made Pork Carnitas Tacos with Pico for dinner the night before and served chips as one of the sides.  Also, to be honest, my hubby and I had watched Step Brothers just before bed the night before and you know that scene at the beginning where Will Ferrell is making microwave nachos…

Anyway, between the left overs in the fridge and Will, my Aha! moment was born.  It was such a success, that we’ve make it half a dozen times in the last couple months.  I’ve served it as an appetizer and also as a main course for dinner.  Happy family and happy friends every time.

In addition to being visually stunning, this is easy to prepare and most of the elements can be made in advance.  If you are looking for something a little outside the box for your next holiday or birthday party, this is a great choice.

Start by making the Insane Slow Cooker Pork Carnitas as they need time to cook.  They can also be made the day before and reheated.

Next, make the Party Pico de Gallo.  The Pico recipe makes enough that you could also serve it with chips along side the nachos to increase your appetizer spread.

15 minutes before you want to serve your Seriously Amazing Pork and Party Pico Nachos, line a cookie sheet with foil to help with clean up.  Spread tortilla chips on the cookie sheet.  Top with copious amounts of shredded cheddar or Monterrey jack cheese.  Sprinkle warm shredded pork evenly on the chips and cheese.  Place chips in preheated 400 degree oven and bake for 10 minutes until cheese is melted.  Remove from oven and evenly distribute the Pico on top of the pork.

At this point, you have two options.  You can choose to serve directly from the cookie sheet or if a more impressive display is preferred, layer nachos on a platter with each layer being slightly less wide to create a pyramid effect like what you would get in a restaurant.  Garnish your finished Seriously Amazing Pork and Party Pico Nachos with olives, green onions, jalepeno slices, sour cream, or anything else you like.  Enjoy!

Ingredients

  • 13 oz bag tortilla chips
  • 2 cups shredded cheddar or colby jack cheese
  • 1 recipe Insane Slow Cooker Pork Carnitas
  • 1 recipe Party Pico de Gallo
  • Garnish - olives green onions, jalapeno slices, sour cream

Instructions

  • Preheat oven to 400 degrees.
  • Line large cookie sheet with foil.
  • Place chips in a single layer, slightly overlapping on foil.
  • Top chips with cheese.
  • Evenly distribute warm pork over cheese.
  • Bake 10 minutes or until cheese is melted.
  • Take out of oven.
  • Sprinkle Pico on top of pork.
  • Garnish with olives, green onions, jalapenos, and sour cream.
  • The prep time is for all 3 recipes, but the cook time is just for the nachos
