When my Dad thinks I’m over complicating something, he just loves to ask “Is the juice worth the squeeze?”  Well, I give this a resounding “YES”!

Is this the easiest/fastest waffle recipe out there?  Nope.

Is this possibly the BEST Waffle Of Your Life?  I think so!

So if you are that person, just like me, who thinks a smidgen of addition effort is worth it to get the most mouth watering results possible, you’ve come to the right place!

This sweet, salty, crispy combination was created for one of my family’s favorite things…..Breakfast for Dinner.

Yes, the kids deserved a treat that day, and OK, yes I also didn’t want to run to the grocery store.  But let’s just say that this is Christmas Morning worthy!

The waffles are really pretty straight forward.  Separating the egg whites and whipping them into soft peaks before folding them into the batter makes for an airy, light waffle.  Using buttermilk and vanilla in the batter also elevates the flavor of these waffles.  The sprinkle of crisp bacon pieces on top of the batter before the waffle iron is closed makes these seriously extraordinary.

No matter your normal bacon preferences, crispy or floppy, for this recipe, I found crisp to be the best.

Waffle makers tend to vary quite a bit in how long they cook the waffles before the little ‘Done’ light comes on.  If the light comes on before these are crispy and golden on the outside, don’t be afraid to ignore the light and continue cooking until they are.

The Honey Cinnamon Butter is just four ingredients whipped together.  Cinnamon Whipped Cream is only three ingredients also whipped.  Both are quick and easy to prepare and SO MUCH BETTER then plain butter and cool whip.  Trust me!

Serve these Buttermilk Bacon Waffles with Honey Cinnamon Butter with a drizzle of honey and the Cinnamon Whipped Cream.  Extra Crispy Bacon Slices and a side of Fresh Strawberries are the perfect accompaniments.

Buttermilk Bacon Waffles with Honey Cinnamon Butter

Ingredients

Waffles

  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 2 eggs
  • 1/2 cup canola oil
  • 2 cups buttermilk
  • 1 teaspoon vanilla
  • 1/2 pound crispy bacon crumbles

Honey Cinnamon Butter

  • 1/2 cup salted butter - room temperature
  • 3 tablespoons honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Cinnamon Whipped Cream

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 teaspoon cinnamon

Instructions

Bacon Waffles

  • Cook bacon until crispy and crumble into pieces.
  • Oil waffle iron.
  • Stir together flour, baking powder, salt, and sugar together in a large mixing bowl.
  • Separate egg yolks from egg whites.
  • Beat the whites with a mixer until soft peaks form.
  • Stir egg yolks, oil, buttermilk, and vanilla into dry ingredients until combined.
  • Gently fold in the egg whites.
  • Sprinkle bacon crumbles onto batter before closing the waffle iron.
  • Cook until golden and crisp.

Honey Cinnamon Butter

  • Using a mixer, whip butter until it is light yellow and fluffy.
  • Add honey, cinnamon, and salt.
  • Continue mixing until combined.

Cinnamon Whipped Cream

  • Using a mixer, whip very cold heavy cream in a chilled bowl until soft peaks form.
  • Add cinnamon and powdered sugar and continue mixing to combine.  Chill until ready to serve.
