  • 24 ounces blackberries - fresh
  • 1/2 cup sugar
  • 2 tablespoons lemon juice - fresh squeezed
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Crisp Topping

  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter - room temperature
  • 1 tablespoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon


  • Preheat the oven to 375 degrees Fahrenheit.
  • In a mixing bowl, stir together the blackberries, lemon juice, lemon zest, sugar, vanilla, and salt.
  • Pour the berry mixture into the bottom of a 9" cast iron skillet.

Crumble Topping

  • Stir together the flour, sugar, salt, lemon zest, and cinnamon in a mixing bowl.
  • Cut the room temp butter into the dry ingredients using a pastry cutter or fork until the mixture resembles course crumbs.
  • Sprinkle evenly over the berries in the cast iron skillet.
  • Bake for 30-35 minutes until the blackberries are bubbling around the edges and the crumble has turned golden.


A 10" cast iron skillet will work as well but may require less cooking time.
Frozen blackberries may be substituted for fresh.  Add 5-10 minutes if the berries are still frozen when placed in the oven.  If the berries are thawed, the cook time should remain the same.
A 9x9 square pyrex baking pan or a deep dish pie plate may be substituted for the cast iron skillet.
