- 1 pound brussels sprouts
- 1/4 pound bacon cut into 1/2" strips
- 3-4 shallots sliced
- 2 tablespoons olive oil
- kosher salt and black pepper to taste
Preheat oven and a cookie sheet to 400 degrees.
Trim the stems and slice the Brussels sprouts in half.
Cut the bacon into 1/2" wide strips.
Peal away the outer skin and slice the shallots.
Place sprouts, bacon, and shallots on preheated cookie sheet.
Drizzle olive oil and stir to evenly coat.
Sprinkle salt and pepper.
Bake 15 minutes.
Flip and bake an additional 15 minutes until Brussels sprouts are caramelized and bacon is crispy.
