Ingredients

  • 1 pound brussels sprouts
  • 1/4 pound bacon cut into 1/2" strips
  • 3-4 shallots sliced
  • 2 tablespoons olive oil
  • kosher salt and black pepper to taste

Instructions

  • Preheat oven and a cookie sheet to 400 degrees.
  • Trim the stems and slice the Brussels sprouts in half.
  • Cut the bacon into 1/2" wide strips.
  • Peal away the outer skin and slice the shallots.
  • Place sprouts, bacon, and shallots on preheated cookie sheet.
  • Drizzle olive oil and stir to evenly coat.
  • Sprinkle salt and pepper.
  • Bake 15 minutes.
  • Flip and bake an additional 15 minutes until Brussels sprouts are caramelized and bacon is crispy.
