Ingredients
1
pounds
Asparagus - fresh, thick spears
2
tablespoons
extra virgin olive oil
1
teaspoon
course kosher salt
1/2
teaspoon
black pepper, fresh ground
2
lemons, cut in half
Instructions
Wash asparagus and trim away bottom woody ends.
Toss asparagus with olive oil and sprinkle with salt and pepper.
Grill on indirect heat of a medium-high grill for 8-10 minutes with the lid closed until the asparagus is tender-crisp.
Rotate spears directly over the heat for the last minute to create charred edges.
Place the lemons halves, cut side down directly over the flame and cook for 2-4 minutes until the cut edges caramelize and turn dark brown.
To serve, squeeze the amount of juice desired from grilled lemons onto the asparagus.
Notes
Thin stemmed asparagus will work equally well as thicker stalks, but may require less cook time for a tender-crisp result.
