Grilled Asparagus with Grilled Lemon

Ingredients

  • 1 pounds Asparagus - fresh, thick spears
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon course kosher salt
  • 1/2 teaspoon black pepper, fresh ground
  • 2 lemons, cut in half

Instructions

  • Wash asparagus and trim away bottom woody ends.
  • Toss asparagus with olive oil and sprinkle with salt and pepper.
  • Grill on indirect heat of a medium-high grill for 8-10 minutes with the lid closed until the asparagus is tender-crisp.
  • Rotate spears directly over the heat for the last minute to create charred edges.
  • Place the lemons halves, cut side down directly over the flame and cook for 2-4 minutes until the cut edges caramelize and turn dark brown.
  • To serve, squeeze the amount of juice desired from grilled lemons onto the asparagus.

Notes

Thin stemmed asparagus will work equally well as thicker stalks, but may require less cook time for a tender-crisp result.
